Seared medium rare, with wasabi soy cream atop crisp ginger dusted wonton crisp

Barbequed Pulled Pork
Atop jalapeno cornbread cake topped with pickled red onion relish

1st Course - Baby Spinach & Ponchatoula Strawberry Salad
Fresh sweet strawberries, pistachio crusted goat cheese medallions and shaved red onion tossed with a balsamic vinaigrette

2nd Course - Free Range Chicken Breast
Butterflied and filled “Saltimbocca Style” pancetta, provolone and fresh sage finished with roasted garlic cream served atop a bed of mashed Yukon’s laced with artichoke and parmesan surrounded with sautéed buttered Anazani Beans
